Bengali style Dudh Puli Recipe

Dudh puli recipe is one of the authentic Bengali recipes. Dudh puli is simply a dumpling made with rice flour and the filling contains coconut, mawa or koya, jaggery cooked in reduced milk(kheer).

My Dudh pili recipe

I am from Bengal. As a child, this recipe was used for my favourite sweet dishes. I have learned this recipe from my mother. My mother has a speciality when it comes to sweet Bengali dishes like patisapta, dudh chitoi, misti dhoi.

Dudh puli filling is generally a mixture of coconut, jaggery and sugar, but I don’t like coconut much so instead of coconut  I have used mawa with milk and sugar for the filling.

  1. Rice Flour
  2. Milk
  3. Mawa/Khoya Kheer
  4. Cashew
  5. Raisin
  6. Sugar
  7. Cloves
  8. Elaichi
  9. Dalchini( Cinnamon stick)
  10. Tej Patta(Indian Bay Leaves)

Dudh puli recipe stepwise

Preparation the filling

  1. This is the first step of stuffing. In a kadai take 1 Cup of milk and add 1 cup of koya and gently milk mix it for a bit in low flame.
  2. Add 1 cup of sugar and mix until mixed properly. Cooked until it becomes a thick mixture.

3. Put the filling aside take a kadai and add 1 cup of water. Boil it and off the flame

4. In the kadai add 2 cup of rice flour and mix it properly.

5. Transfer the dough in a bowl and kneed it. Make sure the sought is not hard, add water if required

6. Kneed Until the sought becomes smooth. Cover the dough in a muslin cloth for a bit.

7. Now take a coin-sized dough and make it a round shape.

8. Use a finger and press in the middle of the dough until it becomes a thin pocket-like shape. Use rice flour so that the dough does not stick.

9. Fill the pocket with the mawa filling. Make sure not to fill a lot otherwise the filling can come out.

10. Now shape the dumpling U like shape. You can shape the dumpling as you wish.

11. These is the last steps in dudh puli recipe.  Take 4 cups of milk and boil it until becomes half.

12. Add tej patta, 3 to 4 cloves, cardamon and dalcini.

13. Now pour the dumplings into the reduced milk and slowly stir until all the dumplings are submerged in the milk.

14. In a side take a small bowl, add half a cup of milk and mawa. This will thicken the kheer. Now add that to Kheer.

15. Add 1 cup of sugar to the dudh puli recipe. You can add jaggery instead of sugar.

16. Garnish Dudh puli with cashew and raisin. Thought dry fruit are optional.

Some Tips For Dudh Puli Recipe

  1. Stuffing: Usually coconut cooked with jaggery is used as stuffing, but you can use any milk item as stuffing.
  2. Milk: Use Full-fat milk. It will enhance the taste and the kheer will be thicker.
  3. Jaggery: You can use jaggery instead of sugar in the kheer. jaggery tends to increase the taste and the text of dudh puli.

  • 2 Cups  Full Fat Milk
  • 2 Cups Sugar
  • 300 grams Mawa/Khoya
  • 10 whole piece Cashews
  • Garam Masala( cloves, elaichi, tej patta, darchini)
  • Hot Watet
