This is the Maharastrian-style kanda poha recipe. This is the simple recipe that I learned when I was studying in college.
I have used potato raw directly in the recipe but you can either boil or steam the potato. I have used cashews which are not usually given in recipes but I like it that’s why I added this to my recipe.

- Poha Size: There are different sizes of poha available. Make sure to use the Medium-size Poha. Big size pohe will become much mushy because it retains more water.
- Washing poha: Make sure to wash it using a strainer. Don’t soak the poha in water otherwise, it will become mushy and the recipe will not turn as you will think. Drain all the water properly then use the poha in the recipe
- Veggies: You can make the poha more healthy by adding more veggies like carrots, capsicum, potato, peas, and beans. Make sure to cut the veggies into small pieces that will cook very quickly. You can boil the potato if you want, make sure to add salt during boiling.
- Platting: When the pohe is ready, make sure to pour the poha in another bowl. Otherwise if it kept int same kadai , it will come mushy.
